CAVABUN’s Original Ricotta Cavatelli is my grandmother’s (Mom Mom's) over 100-year-old recipe originating from my ancestors of the hills of ancient Castel Morrone, Italy, in Caserta Province in the Southwest region of Campania. Mom Mom is the proud Italian woman you see on our packaging. Our Ricotta Cavatelli product is our way of honoring her and the way our family has been making this pasta for decades.
Mom Mom brought to the US all of her recipes, unique preparations and techniques, love for cooking, and passion for sharing her gift with future generations of our family. Cooking was one of the most significant ways she showed her love for family and friends. Her recipe is the foundation of everything we create and is our way of keeping her close in every batch we make.
I learned from her and my parents as a little girl, the way to prepare and prep the dough to hand make each cavatello. Mom Mom thoroughly enjoyed and took great pride in sharing her expertly-prepared dishes, including her pastas and sauces, that were proudly served to our family and friends. Her technique was masterful and everything she made was so delicious.
My father has shared a story about the family doctor and his wife who loved to come for dinner at my grandparents’ home in Little Italy, Wilmington, Delaware, to enjoy her food. Many, like the family doctor, urged my grandparents to open their own restaurant so they could enjoy Mom Mom’s delicious and authentically-prepared food much more frequently, but it wasn’t to be.
CAVABUN pasta is our way of honoring her memory, her passion for cooking the authentic Italian way of our family, and sharing with you one of her favorite pastas.
